Granola Bars
*This makes a chewier granola bar…I’ve had a few people comment that due to its sweetness, its more of a treat than a traditional granola bar. However, when I look at the ingredient list, and given that my kids get some sort of “treat” in their lunchbox on most days anyhow, I’m perfectly fine with this as an option!
2 cups rolled oats
1/3 cup packed brown sugar
¼ cup wheat germ
¼ cup flax seed
1 teaspoon cinnamon
1 cup wheat flour
1 cup raisins or other dried fruit (optional)
Chocolate chips (optional)
½ cup honey
1 egg, beaten
½ cup canola oil
2 teaspoons vanilla extract
½ cup applesaucePreheat oven to 350 degrees. Generously grease 9×13 pan.
In large bowl, mix together the dry ingredients. Make a well in the center, and add wet ingredients. Mix well using your hands. Pat the mixture evenly into the prepared pan.
Bake for 30-35 min, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while warm.
*My family gave these a “thumbs sideways” all the way around…”a bit plain,” my daughter critiqued. Next time I am going to add cinnamon to see if that helps. I did make several of my fairly standard substitutions including applesauce for the oil, half whole wheat flour, omitted the salt and added flaxmeal. Instead of raisins, I added cranraisins and 1/3 chopped apple.
Zucchini Pie
*I can’t remember where this recipe came from, but its so modified, its basically my own.
3 c zucchini, shredded
1 carrot, grated
1/2 c corn
4 eggs
3/4 c shredded cheese of your choice (we used a mexican blend)
1/2 c low fat sour cream
2 T olive oil
1 package breakfast sausage, browned and cut into bite size pieces
1 c bisquick mix
italian seasoning to taste
garlic to tasteMix all of the ingredients together, adding bisquick last. Spoon mixture into greased muffin tins and bake at 350 for 20 minutes. Made 12 muffins.
Basically tastes like a super moist muffin. My kids hate zucchini but could not detect the taste at all. Same with the carrot, though they’ll eat those without issue
