Today’s lunch was another experiment. My daughter really doesn’t care for sandwiches, but loves breakfast, so what did this mom do with the leftover pancakes?
The Contents – Apple and kiwi kabobs, chocolate goldfish, almonds and skittle mix, green salad with carrot shreds and apple chunks, banana wraps.
The Details – One of my kids’ favorite snacks is leftover pancakes spread with jam and rolled up like an enchilada. In an attempt to make it a bit more filling, I used my daughter’s favorite sandwich filling: cashew nut butter and banana. My pancakes were also reasonably healthy: I start with a mix, add milk, eggs, flax seed meal, applesauce and cinnamon. Spread with nut butter, slice a banana length-wise. Easy peasy. I packed two, though she only ate 1 1/2 so they must be pretty filling.
The Verdict – She LOVED the banana wraps, so I’ll be keeping that one for future reference. I need to find an option for my boys since they are not so keen on nut spreads. She said the salad was messy but maybe that’s because I forgot to send a fork? Leave it to mom.
