Make Your Own Salad Leftovers March 1, 2011

Today’s lunch features a family-favorite leftovers.  We love to do “make your own salad,” which lends itself nicely for follow up lunch.  Just chop a few more add-ins and viola, lunch is basically done!

The Contents – apple bites, cucumber, carrots, a hard boiled egg, a biscuit topped with a salami star and an oatmeal raisin cookie.

The Details – I did cut fresh apples and a salami star, but everything else is leftover from last night’s dinner.  This lunch was particularly easy, as I was able to pack most of it as I was cleaning up dinner.  Anything leftover was packed straight into their lunch containers.

The Verdict – My son’s box was cleaned out, but my daughter brought most of her veggies home, claiming this lunch was too big…

I have, in the past, also sent lettuce for an actual salad.
