Inspired by this post as well as a recipe I picked up from our local grocery store, I attempted a new breakfast idea, of course with the option of it being lunch friendly too. My kids termed them “Egg Muffins,” and that works for me.
6 slices of bread (I used leftover hamburger buns)
1/4 c milk
1/2 c cheese
6 slices deli ham
- Preheat oven to 375. Spray muffin tin. Press bread into muffin cups. Line bread with ham slices.
- Mix eggs, milk and cheese. Pour mixture into prepared muffin tin. Don’t worry if the egg mixture spills over the ham.
- Bake for 30 minutes. Cool before eating.
My boys liked them as is, my daughter just ate the egg part but really liked it. They all requested these for breakfast in tomorrow 🙂 They also suggested using bacon or sausage. Bits of veggies would be good too!
